WHere is a simplified version of a drink found on the seasonal cocktail list. This is a party-sized pre-mixed that is packed full of flavours of a festive period, making it perfect for your celebration. Any leftover citrus syrup to use in brunch beverages, desserts, or for additional servings of bikinis.

Yields 10 guests
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Place all the components inside a saucepan, heat until it reaches a gentle boil, stirring to dissolve. Next, turn off the burner allowing it to reach room temperature entirely. Transfer into an sealable bottle, cap it keeping it chilled, it will last for about one month.
For the Cocktail Base: Mix all the liquids into a large bottle, let it rest for 60 minutes, then pass it through best through cheesecloth, making it fully clarified.
To serve: Measure 85ml from the batch mix into a stirring glass filled with ice, and agitate carefully for one minute until cold. Filter to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish with a quick spritz of mandarin oil over the drink.
